My favorite breakfast always is Huevos Rancheros- eggs with either red salsa or green salas. it is so easy to make for your guests too and is a healthy breakfast.
I use corn tortillas (first heat them over a gas burner or in a pan to soften them), scramble or fry your eggs to your preference and top with your favorite salsa (heat the salsa first). I like to serve this with black beans, and I use the organic low sodium ones in a can. Rinse them well, heat them and add a dash of cumin. Serve with mashed or sliced avocados and you have a winner in less than 15 minutes!
